how can i fix my kettle?

'on' / 'off' switch for my breville contour JK112 kettle fails to stay 'on' . how do I access the switch mechanism so that I can replace it?

If it's new enough it should be in warranty - take it back, demand a full refund, and state that it is of unmerchantible quality. I own one of these kettles and it's a flimsy piece of junk that wastes electricity with that childish blue light.
If not, then I suggest using your common sense and finding any access screws you can and undoing them to have a look. Although it's highly likely that it's the thermostat broken instead, thinking that it's already boiled and switching off before it has actually heated. Harder to replace than a simple switch.
