How to increase the pressure on my Vaillant Ecomax 828/2E boiler?

I have located the two valves but can anyone tell me which way to turn them, clockwise or anti clockwise...? My valves are very stiff. Also does anyone know what the red nob is that says '3 bar' (it's at the back on the right hand side).

The valves turn anti clockwise, and the red knob that you see is the pressure release valve or PRV that lets water out of the boiler. Best not to touch that!
