How can I program VAT rates in a Sharp xe-a102?

How do I do the VAT coding for the sharp xe-a102 when the selling prices are quoted with the VAT already included? The machine will be used in a restaurant in France where two rates of VAT can apply, and where VAT-inclusive prices are invariably quoted.

I am answering my own question! We disovered totally by chance how to do it when practising on the machine before putting it into use.

The instruction manual is so appallingly written that it omits to mention even the most basic features of the tax systems being described.

Also there are no worked examples, which would have made the situation clear from the start.
