how to remove old yellow glue from china?

Have two angel figurines that were mended years ago by somebody unknown by glueing the heads back on. The heads are off again and the residue of the old yellow glue is on both surfaces, which of course would be irregular underneath the glue.

How to remove this old glue is first question. Then, what modern glue to use once the old is gone.

I have encountered the same problem. I soaked the pieces in hot water to soften the glue and the used a pin to lift just enough of the glue to allow me to nip it with my fingernails. I then pulled gently and was lucky enough to ease the glue off in one piece. Good luck.
