How can I fix a Bosch KGN33V00GB/01 fridge-freezer?

Bosch Fridge-freezer, KGN33V00GB/01.

Freezer auto-defrost does not work. Freezer evaporator iced up. Fridge does not cool.

Switched off and emptied - took ages to defrost.

Have taken out Regulator-temperature (Bosch pt.no. 00661623).

Q1. Is this a radio control? (no wire connection)

Q2. How do I test it?

Q3. What other faults could there be?

If this is the part:

It looks like it is some kind of bimetal actuator; nothing electronic.

Close examination and thinnking along the lines of basic mechanical principles may give some inspiration as to how it works.
