How can I fix a dryer that never shuts down, no matter how dry it gets?

Hygrometer (humidity sensor) doesn't function and clothes will be heated and tumbled, perfectly dry, for days if left alone.

I can find parts for thermostat online but nothing for a humidity sensor.

Please advise.
