In a Brocant (boot sale market) in France on holiday last year I bought a fenceless old wooden rebate plane and have now got around to refurbishing it. What's the best angle to hone the blade to?

Sharpening wood chisels on 'Wet & Dry' auto paper from 400 to 800 a bur forms to show its sharp and is removed.
I decided to follow others who use to finish 7000 or 8000 grade 'Wet & Dry but no bur forms. does that indicate its as sharp as it gets.? NOTE: the wet & dry is used WET.
