Hi there - it's behind the dial/light switch housing on the right side of the fridge. Remove the small blanking cover for a screw hole, undo this and then slide the whole cover (can't remember if fwds or backwards) to disengage from the body of the fridge. The thermostat is made up of the elctrical contact parts inside the plastic housing and the sealed pipe which senses the temperature and is coiled round behind the colling element at the back of the fridge.
Good luck - just about to replace the thermostat in ours for the second time .... (will NEVER buy Hotpoint again)
