Not only does the reception jump as well as the picture, half of the channels dont work any idea why ?

Ive moved the arial around pic still stinks, also tryed uploading new channels etc.

Freeview reception needs a carefully aligned outdoor aerial. Unless you live practically next door to a transmitter an indoor aerial will not work. Second "moving the aerial around" will not work either it has to be properly aligned to you local transmitter.
