Can I mend or renew the heat controller knob?

MY neff HALOGEN hob 7 inch ring heat controller knob
works only on/off. On is on maximum heat only.

If it stays on full heat all the time the switch is faulty and yes you can replace the switch.( it is called an energy regulator)
